Resaca Meat Processing is excited to again provide custom deer processing to our local hunters. We offer everything from basic cuts to smokehouse products such as hot dogs, summer sausage, and snack sticks. We are committed to do our best in turning your trophy into high quality products. For all basic cuts, you will receive your own meat back. Because of volume, we do not keep specialty products separate.

 

Please note: Although we do accept quartered deer, our preference is either whole deer or deboned meat.

New Features

**Previously we had a separate charge for the backstraps. This year our basic processing fee for whole deer is $89.00 and $15.00 each for quarters. This price includes anything you want done with the backstraps and inner loins.

 

**We are weighing the specialty products a bit differently this year. You will receive the amount of product you order. For example, if you order 15 lbs. summer sausage, you will receive approximately 15 lbs. finished product. We will start with approx. 12 lbs. meat and then add fat and seasonings according to our ratios. However, if you order your whole deer into product, you will receive the weight of the meat plus the fat and seasonings. For example, if your trim weighs 30 lbs, you will receive around 38 lbs. finished product back.

               

**For your convenience we plan to box your order ahead of time. If you come from a distance, we would still encourage you to bring coolers to keep your meat well frozen.

Deer Drop Off Process

 

Get your confirmation number from the DNR before dropping off your deer. We will need this number when we take your order.

 

During business hours, come to the office first. We will take your cut order.

For whole deer:

We will give you tags to attach to your deer. You will then take your deer to the back of the building where there will be further instructions.

 

For quartered deer and deboned meat: 

We will give you a tub(s) for you to put your meat into. Bring the tubs back into the office. We will keep the meat in the tubs so you can take your cooler home with you.

 

The tags/labels that are attached to your deer or your tub will remain with your deer meat through the entire process. This ensures that you will get your own meat back on the standard cuts.

 

After the deer has been dropped off, our team of butchers will skin the deer, wash it thoroughly, and hang it in the cooler for 3- 6 days. Then we will pull it out of the cooler, scan the tag, and process it per your specifications. We vacuum-pack all the basic cuts and all the specialty products. The deer burger and breakfast sausage are vacuum stuffed into plastic tubes with clips at each end.

 

If you order specialty items, this will require more time and can take up to 2 – 2 ½ weeks to have the entire order completed.

 

Once your order is finished, we will contact you. Due to limited freezer space, we ask that you pick up your order promptly. If we hold the meat for more than 5 days, we will charge $8.00/day for holding it. After 10 days, we will dispose of the meat at our discretion.

Facts About Deer Drop Off

 

Whole Deer (our preference)

If your deer gets caped out, we ask that you pick up the cape as soon as soon as we call you.  If you want the head or the antlers, please saw them off and take them with you. (A knife and saw will be in the drop off area.) If you need assistance with this, we will be more than happy to help.

 

 Quartered Deer

If you bring quartered deer, it must be clean! If it is not clean, you will be charged a $15.00 dirty deer fee. “Clean” means the quarters will have no hair, dirt, leaves, pine needles, etc.          

 

Deboned Meat

If you bring your deboned meat, again it must be clean with no hair or other debris. Also make sure there are no bones in the meat. For easy handling put your deboned meat in gallon bags and on ice. NEVER use scented bags for meat.                                                                                                                                  

 Field Dressed Deer

If we field dress a deer for you, it must be brought the same day it was killed.  We do not accept deer that have been killed the day before and have not been field dressed.  If a deer gets dropped off in this condition, we will throw it away due to a high chance of the meat being contaminated. We prioritize safety and quality.

 

Road Kills

We do not accept road kills. Even if a deer looks good on the outside, the meat will usually be poor quality.

 

After-Hours Drop Off – FOR WHOLE DEER ONLY

The after-hours drop off will be open Monday to Saturday unless the coolers are full.  There will be detailed instructions and tags at the drop off cooler.  Due to lack of space, we will not accept quartered deer in the after-hours drop off cooler.

Because of volume, and to keep consistent premium quality products, we cannot keep the breakfast sausage, bratwurst links, flavored burgers, and smokehouse products separate. Also, we reserve the right to refuse meat that is not the quality we require for our products. If you would prefer that we keep your order separate, there will be an additional charge of $1.25/lb.
